#4 Southwest Ranch Chicken Enchiladas!

Filling:

2 boiled chicken breasts, cubed

1/2 cup ranch

1/4 sour cream

1 can diced green chiles (med heat)

dash red pepper

1 1/2 cups shredded mexican blend cheese

Topping:

1 can enchilada sauce (med)

1 cup shredded mexican cheese blend

mix all filling ingredients. put about 2 tbsp of mix on one end of a 10 inch flour tortilla and roll up. Place in 9 x13 baking dish. top with mexican blend shredded cheese and med enchilada sauce(I use old el paso). Bake @ 350 for 20 min.

Very easy and delicious!

Makes about 7 enchiladas

When you remove the stalks from the corn to make homemade corn tortillas, is that called 'stalking'? FP isn't much of a cook. Oh, no. Those are corn husks, so that must be husking. Stalking is something different.
