We just bought a big green egg.  My husband is building a table for it and I can't wait to get started with it.

Does anyone else here have one?  If so, I sure would enjoy some recipes and find out your experience with it.  I read every site on the net and all of them love their egg.  They all agree experience and time with it makes for perfection.  I'm excited!

Sure would love to hear from ya and get your pointers, recipes and any do's and don't's that you might share with me

I don't have a BGE (Big Green Egg)  - but I am a competition BBQ pitmaster.  (Pacific Northwest Barbecue Association)  Lots of people use the BGE - and for a family or backyard smoker I know lots of people love them. Thanks Tank, I'll head on over to that site.   I've never fixed a brisket so I really would like a recipe for that and anything else you might have time to share... Thanks

Brisket is not for the faint of heart.  :lol:  If you want to do a traditional style Texas smoke brisket - your look at 10-14 hours of low and slow cooking and a couple hours of prep and hold time.

For an easy start I'd recommend some St Louis cut ribs. First - peel the internal membrane (silver skin) off the inside of the ribs. Rub them with a 50/50 mix of brown sugar and season salt, get your smoker up to about 250 - 275 with some apple, cherry or hickory. Smoke for about 2 hours (until they hit about 140 internal), wrap in tin foil and put back on for about an hour(Should be about 160 internal), then take them out, put you favorite BBQ sauce on (we make our own chokecherry chipotle) and back on the BGE for about 20 minutes just to get that sauce to glaze and set.  With a little practice, I guarantee you will hard put to find a better rib in a restaurant. You'll never want Applebee's ever again. :lol:

One thing to get is a good digital thermometer. Good barbecue is cooking to temp and doneness - and time is only a guideline

Wow just quickly glanced at those 2 sites, Tank.  I've got a lot of reading to do.  Those ribs look great.  Do ya think a long cook with 250 to 350 degrees would be okay for the bge.   They say 

Not to go over 350 the first couple of times so you can get those gaskets sealed.  I probably better start with short cook

For all my competition stuff - I never go over 300. There is a school of barbecue thought out there for hot and fast to get a good sere - and that works on some things great, but for the large pieces, low and slow is still best for me. I stick with what I know.

Hey tank......I have re-read every post here.  You say you you smoke and are a competition "pit master" .   ya know, it's not all about the smoking, grilling. Convection or cooking but the rub, the sauce, how about giving it up and giving ME some of your winners.....lol, just playing now but do you have some good rub and sauce recipes?........ Give me a good one..my husband is hungry!

BTW...are you a "Pit Master" that is seen on TV?

I'm not one of the pit masters you see on TV.  In our area, the term pit master is used for anyone who has won an award on the competition circuit.

As for recipes - let me give you a good basic molasses based sauce. This is what I started with and have tweaked it to what I I've found the judges in our area like. This is basically what I use on my ribs - minus a few "specialty" things I save for competition.  Sweet with a bit of heat in the finish.

1 cup ketchup
2/3 cup Molasses
1/4 cup Dijon mustard
2 Tbsp. Worcestershire sauce
1 tsp. Garlic Powder
1/2 tsp. Mrs Dash Chipotle
1/2 tsp Hot Sauce (I use either Frank's or Tapitio)

Put all the liquids into a sauce pan, stir well and bring to a slow simmer.  Stir in the dry ingredients, cover with a lid and let simmer at least 30 minutes - stirring every 5-10 minutes to keep from scorching. If it gets too thick for your liking, you can thin it out with a little more ketchup, some water - or a weak flavored beer (something like Miller Lite)

Personally - I love cooking with beer - and I sometimes even use it in the food.... :cheesehead:

A good simple rub for beef - I use it for steaks, roasts, base for my briskets (I even use it for my prime rib that I do in the oven)

1 cup coarse Kosher salt
1 cup Mrs. Dash Original Table Blend

The BBQ forum I'm at seem to be sold on the DigiQ for most things. I'm not using anything other than constant vigilance *lol* OK - I am using a remote read thermometer. Insert the probe and I have a handheld station that's good for around 50 feet or so from the smoker. I can even program it to beep if it falls below a certain temp or when it reaches a certain temp.
